Onion Confit with Honey
Ingredients
Makes enough for about 12 generously filled tartlets.
- 2 onions
- 2 to 3 tablespoons honey
- A little pepper
Preparation
- Peel and slice the onions.
- Place the onions, honey, and pepper in a pan.
- Cook over low heat for about 30 minutes, stirring occasionally.
- Keep the heat gentle: the onions should soften and become lightly golden without grilling or browning heavily.
- Continue cooking until the onions are tender and have a confit-like consistency.
Serving Ideas
Serve the honeyed onion confit with foie gras or meat, or add it to a homemade burger with Roquefort cheese. It can also accompany a salad or be used as a filling for goat cheese tartlets.
